It’s more than just a name. Jawbox Gin is named in honour of one our city’s lasting legacies, The Belfast sink, a.k.a. the Jawbox. Despite everything that our digitised, globalised, want-it-yesterday world says, some things just can’t be rushed. We like that. And that’s how we make Jawbox.
We start by going back further – all the way to the grain itself.
Yes, we grow and harvest it ourselves on the 300 acre Echlinville Estate. And we use our own water. And using the grain we distill our own spirit. You see, having control over the process gives us control over the product. That’s what gives our gin its unique character and makes it Ireland’s first single estate gin.
The Echlinville Distillery became Northern Irelands first licenced distillery in over 125 years distilling its first spirit in 2013. We appreciate the importance of terroir. We have worked this land through generations of our families. The Ards peninsula is our home.
We know its unique topography, its rich soil, its saline air and its temperate climate. This inherent understanding, the sensitivity to place, empowers us to produce spirit unique in character and true of place. Our barley is grown in the fields surrounding the distillery and we have revived the age old tradition of distillery floor malting. We truly are producing spirit from field to glass.
